Graus sausage is a symbol of Aragon. With a flavor that has been conquering palates decades, this Oscense product has become one of the most dear and recognizable gastronomic emblems in the community.

Therefore, it is no accident that GRAUS organizes a great celebration in honor of its most famous ambassador. A party declared a Tourist Interest party of Aragon and combines tradition, gastronomy and a unique challenge in the world: to prepare and cook the longest sausage on the planet.

Now, the town is already finalizing all the preparations for this new edition, which promises to keep alive the flame of the Guinness record and demonstrate why the Longaniza party is an essential event in the summer calendar of Aragon.

All summers, Aragon is filled with popular parties, but few are as shocking as the Longaniza de Graus party. Every last summer of July, thousands of people come to taste this gigantic piece of sausage that, for almost three decades, breaks Guinness records without apparent effort.

In 1996, Graus surprised the world with a 505 -meter sausage. Since then, it has rained a lot and the challenge has not stopped growing: today the figure is around the kilometer. As explained by Mía Sánchez Guerrero, manager of the Association of Longaniza manufacturers of Graus, to Aragon Press “the figure is always approximate because it depends on the natural caliber of the gut, but we talk about about a thousand meters every year.”

To achieve this culinary feat, Graus uses a giant grill made of iron with a weight of 875 kilos, it has to be moved with a crane due to its huge dimensions. “We have to go very careful because the temperature can deform the structure. The grills, who are already true experts, control everything to the millimeter to avoid damage and get the perfect point,” says Sánchez.

But cooking a giant sausage not only depends on the grill. More than 65 volunteers are organized for days so that everything comes out as planned. “Here everything counts, from the sausage to the temperature of the embers, and although we try to respect schedules, the experience tells us that there are always surprises,” acknowledges the manager. Therefore, coordination between volunteers is constant: any error could spoil months of planning.

More programming of the Longaniza party

Although the great moment will arrive on Saturday 26 with the cooking of the giant sausage, the party starts on Friday in the Plaza Mayor of Graus. From 7:00 p.m., the inauguration of the event will take place with the popular Longanizafest, where recognized chefs, such as the Michelin Iris Jordan star, will present covers made with this star ingredient, as well as other Aragonese products.

In addition, the organization advances that more than 10,000 rations of this specialty will be served, following the spirit of the traditional Matacía: a time when neighbors and family celebrate together around fire and local gastronomy.
