The mandatory stop of the A-23 towards the beach: ham and sausage for the first holiday appetizer
When summer arrives, thousands of Aragonese cross the province of Teruel Rumbo to the Valencian coasts. Swimsuits, umbrellas, refrigerators and suitcases fill the trunk with everything essential to enjoy a few days of beach. However, before reaching their destinations, many of them keep a hole in their travel itinerary, and in their stomachs, to make a mandatory stop.
We talk about the dryer of Hams Don Jate, in the La Paz polygon. A high on the road that has become tradition for those who know that a vacation knows better with sausage home. It is a temple where hams with a protected name are cured, but they also sell pallets, loins, tajadicas of the grandmother and cured bacon, all elaborated in the traditional style and with 100% Turolenses products.

Although many discover it by chance, others are intentionally looking for it year after year. The stop in Don Jate has become a ritual prior to the beach bar and if there is no place to put it in the car, there is no problem because they also send it home cold and in just two days.
More than six decades doing ham in Teruel
Don Jate is the result of a long family career linked to the meat world since the late forties. The origin is located in Alfambra, where Teodoro Villamón and Humility Martínez launched a small carnage with their own breeding animals. They themselves took care of the entire process, from production to the sale in their store. His six children grew within this work environment, learning the values of effort and trade since childhood.
In 1980, the second generation founded the company Alvimar, which was consolidated in Teruel with the progressive opening of supermarkets and a clear commitment to its own product. The accumulated experience and the knowledge of the sector allowed to take a step further: to have a exploded room, sausage factory, natural dryer and, later, its own slaughterhouse, thus closing the entire productive cycle. The Don Jate brand became the distinctive seal of its products, with special recognition in the ham with the denomination of origin.
Today, the group maintains its activity in the La Paz polygon, where it also projects the opening of a new Cash and Carry space. Its physical store, the online sales channel and the distribution to the Horeca sector are still pillars of a company that has managed to evolve without losing its roots. Don Jate continues to be a reference of the Turolense meat sector, with a model based on the local product, natural drying and close to the client.

Don Jate’s catalog focuses on the production and healing of traditional hams and sausages, elaborated from cattle raised in the province and treated in their own facilities. Among the most prominent products are Teruel’s ham with a denomination of protected origin, the Gran Reserva Don Jate and the cured pallets, all subject to a natural drying process at altitude. To these are added pieces such as the Cecina of Yearjo, the Embuchado Loin or the town sausage, which maintain artisanal methods and a slow and controlled healing.
In addition, the company offers a line of vacuum packaged products and ready for consumption, designed for both direct sale and the distribution channel. The so -called “grandmother’s tajadicas”, the cured bacon or the Furtles complete a range that includes entire pieces to special lots. The availability in physical store and online format facilitates access to these foods, which are a usual part of the pantry of many Turolenses families and that also reach other communities through the refrigerated cast.
Don Jate’s dryer demonstrates that Teruel’s ham is a feeling because for many Aragonese, there is no summer without beach, but neither without the stop in Teruel to take a bit of its flavor.
